Vacuum or freeze dry food

Discover the gentle way of drying with the Bucher Merk DryCab - gentle, efficient and tailor-made for heat-sensitive products!

Vacuum-dried and freeze-dried food in the food service industry

Vacuum drying and freeze-drying are gentle methods for preserving food. Aroma, taste and nutrients as well as the shape can be excellently preserved during freeze-drying. Freeze-drying removes the water from frozen food without defrosting it. This leaves the delicate cell structures intact, which preserves the shape and color of the fruit much better than conventional drying methods.

This extends their shelf life without the use of chemicals and ensures that vitamins and minerals are retained. The combination of these processes opens up new possibilities for food processing, and Bucher Merk is your partner for the efficient production of these high-quality products. Our specialized systems guarantee gentle drying processes that are tailored to the individual requirements of your products.

Food that you can freeze-dry

Fruits

Drying frozen fruit by freeze-drying is a particularly gentle method of preserving it. Volatile flavors are also optimally preserved.

Vegetables

Freeze-dried vegetables are perfect for powdered instant products such as soups and sauces, as they rehydrate optimally, meaning they combine quickly with liquid. The gentle drying process also preserves volatile flavors even better, which further enhances the quality of the products.

Coffee and tea

Freeze-dryers and continuous freeze belt dryers are ideal for freeze-drying coffee and tea extracts.

Fish and seafood

Freeze-drying fish and seafood makes it possible to preserve even volatile flavors better than with conventional drying methods.

Meat

Freeze-dried pieces of meat or minced meat offer excellent long-term storage and are perfect for use in ready meals or as animal feed.

Pet food

Freeze-dried pieces of meat and animal feed have a particularly long shelf life due to their minimal water content. Compared to other drying processes, volatile aromas are better preserved.
